Order cut-offs and open dates
How far ahead ordering opens, when it closes, and why the cut-off lands at 23:59 your time.
Two settings on the pickup day control the whole ordering window, and both are counted in days before the pickup date.

The time of day
Cut-offs land at 23:59 in your bakery’s time zone, not the customer’s and not UTC. If your time zone is wrong in Settings → Business Profile, every cut-off you set is wrong too.
What closing actually does
When the cut-off passes, the day stops accepting orders, the Promote stage finishes, and your storefront rebuilds so it shows "Orders closed" rather than a menu people cannot buy from. If you have subscribers, their orders for that cycle are generated at the same moment.
Closing early, or reopening
You can close a day by hand before the cut-off — useful when you have sold what you can bake. Pausing a day takes it off the storefront without touching the orders already placed: you stop selling, and you still honour what is sold.
